I purchased some chardonnay juice. I added fermax and dap a few days ago and the brix has already dropped to about 4. When I got it it was around 15 and apparently had already started fermenting. I measured the ph today and it was 4. Did the dap/fermax effect the ph? Is it just so high because it's fermenting? I thought these juice buckets came with the adjusted ph.
 
Your ph value is off because of CO2 from fermenting. wait util your sg is 1.00 then rack . rack again in three days then in three weeks. measurements can be made at that time. any values you have now are in error do not make adjustments based on this test data.

CO2 would decrease the pH (it will form carbonic acid when dissolved in water). How would that cause an increased reading?
 
You can always microwave a small sample and drive off the CO2. I wouldn't make any adjustments now that it is fermenting for sure. Best to wait until the wine is stable.
