Just to share...

Not too far from me is a Michelin rated restaurant called "90 acres". It is located on an estate that once belonged to the king of Morrocco. The scenery is incredable!

A couple of weeks ago, I attended a cooking class hosted by this restaurant. The class was structured as a "cook along with me" type format, so we could get hands on experience.

The menu went as follows..
rosemary/cheese puff pastry appitizer,

Romane Lettuce salad in a french vinegrette topped with a goat cheese crouton,

Hanger Steak, potato croquettes, roasted tomato en cruet, and a neat potato for entree,

Berry torte w/ crem englais for desert.

It was a lot of fun, even if I was the only man there.

Cant wait to cook this for the wife!
 
I hate classes like that. It's a lonely feeling but I find my self struggling through them. Now to go find one of those around here myself.:)
 
my mom owned and cooked in her restaurant on burgundy street in New Orleans when i was young. I learned to cook there, and I am very glad I did.
She was an excellent cook. Of course about all she cooked was local cajun foods...Over the last 45 years I have progressed..Most cooking classes I have taken, I could teach the teachers...pretty much like wine making..learn the basics make a few mistakes, perfect what your making.
 
I did a wine/food course with a local chef. It was really fun, 4 classes in the evenings. On the last class, the chef (and us) prepared a full meal and he provided matching wines for everything. I just happened to bring along several bottles of my wines and he opened them and shared with the entire class.

The chef has since started making his own wine.

I Kid, I LOVE CAJUN FOOD!!!! been to the big easy several times and never ate better.
