I was wondering if anyone had any country wine recipies that taste like their grape counter parts. My first apple wine tasted like one of the best Chardonnay i have ever had. My second was very different even though i use the same yeast, same sugar, same acid content, and now i have controlled temp.

My blueberry is great, very blueberry. The sg stayed at .999 for 6 months, i bottled. I think it could be a little dryer.

Hi Nate,

You are not ever going to be able to control the taste from one batch to the other even if you have the same sg, yeast, temp and acid level. The fruit itself will have different levels of flavor depending on a lot of conditions such as how much rain, how much sun shine, how long from one rain to the next, etc. This will also affect how fast or slow the fermentation will take place and this will also affect the taste of the wine. Each batch that you make has it's own distinction.
 
I also compare a good Apple wine to a chardonnay!!!

Other than that.... There is not many more fruit wines that I think resemble Grape wines.... But they are great tasting. IMO

The whites come the closest IMO... Apple, pear, Peach and Apricot.
 
I've been told two or three times that this summer's blackberry is reminiscent of pinot noir.

Since I make it, all I can smell is blackberry, but I can imagine it. ;)
 
I used the recipe listed here in the recipe section, minus the grape concentrate and only a 3g batch. :d
 
Hehehe, it was 28 cans of DelMonte sliced pears in heavy syrup and then I believe I added about 6 tsps of acid blend to make a 6 gallon batch. It was many years ago, I also believe I used about 6 lbs of sugar and then just added water to about 6.5 gallons. I then sweetened the wine with a 1/2 gallon of pear juice that I found in a nature food store. The only reason I did this was there was a huge canned good sale at the time.
 
I have found that the commercial blueberry wines I have tried drink like grape wine... I haven't tried mt own blueberry yet because its not ready yet...
 
I started a pineapple wine on 11/27/2010 after reading Wade's post. I checked the sg and it was already .998 on 12/5/10 so i racked.

5 20 oz cans of 100% pineapple in pineapple juice dole
2 20 oz cans of water
2 cups english breakfast tea. 2 bags.
1 tsp pectic enzyme
1 tsp yeast nut
1# sugar. I should have checked the sg before adding the sugar.
s.g 1.092 @68 deg

Spotted it today and it is very clear. I could read the label on the gallon behind it
