Hope everyone had a great thanksgiving!

CRP has been in carboy 14+ days (after stabilizing). Directions say to check for clarity and if not clear leave for another seven days.

There appears to be a good amount of sediment in the carboy...My question is should I rack it off the sediment, degass and leave it in the carboy for another 7/10 days.

Also, my garage stays around 63-66 degrees....is this too cold for the port?

thanks

If you havent degassed this then those temps will hold in the trapped gas making it harder to drop all the sediment needed for this more viscous wine to clear. Id let it sit longer if its been degassed good and let those lees compact more and even tip the carboy to 1 side so as that you can rack off the clean side where the lees arent so deep. Even after racking off these lees give it much more time in the carboy then specified as it will drop more very fine lees due to its viscousity.

I degassed it at stabilizing per the directions, but i thought I might degass it a second time as well. Also, it has been sitting at a room temp of approx 70 for the 14 days.

I thought i would rack to carboy degass and then move the carboy to my garage for another 7-10 days......thoughts?

I would let it sit longer then that after moving it to garage which will be fine. This wine will drop sediment for a while even after using a fining agent due to its thickness . I always let my wines sit m uch longer after clearing then suggested and they always drop more sediment.
