Hopefully someone sees this before too late, I really want to get this CC Blush Zinfandel bottled tonight. I did a few tests with my new Vinmetrica SC-300 and my pH is 3.28 and my Free so2 is 40 ppm. Seems a tad high right? Can someone tell me if that is a decent number for long term storage and how much of it is bound vs. unbound? BTW, I don't have Clinitest tabs but my hydrometer shows Balling scale (RS I believe) to be 3% since I did backsweeten with an invert sugar syrup.
