Do yall test the pH?

What should it be at for Red Wine?

Does it usually come out under or over that?

I just wing it and do everything by taste..


Hopefully someone will be in soon with some actual ( useful!) advice.

For red wines the pH of musts should be between 3.2 and 3.6. The lower figure would be more acidic and sour. A pH of 3.5 would be preferable in a finished red. A pH much higher than 3.6 will result in an unstable wine with a short shelf life and wines with a pH below 3.2 will be too sour.
 
Agree with above and yes I do test my wines now that I have a reliable ph meter. Up until now I have been using the Accuvin tests which are the next best thing and probably the best testing kits out there.
 
Wade...What are you using now? You said "up until now" you had been using....

What are you using now? If I'm going to buy something, wouldn't I want to get the best thing?:h
 
he's using a ph meter(probly digital) now David, before he was using the Accuvin tests(a kit I think as I've yet to get a kit for testing)
 
I think I'll have to add that to my Christmas list...Maybe from myself! LOL
