I've got one thats been aging since 10/09 in a carboy. I want to bottle soon to drink this summer. The last K-meta addition was 1-10-09. I will probably leave it in the fridge for a few weeks before bottling.


Should I add anymore K-meta, or can I leave it be.I plan on not bottle aging this because it was already in the carboy for a while, and we will probably be drinking most of it this summer....
 
Definitely need to add another shot!

Its been 90 days since the last edition and whites are much more prone to spoilage (or oxidation) than reds thus they need even more sulfite protection than a similar red wine.

There won't be any taste issues with the K-Meta drinking it soon after adding it to the wine?
 
Shouldn't be if you added the proper dose on 1/10. If it seems a little strong on the first bottle then you may want to open it up and let it breath for 15 minutes or so.

If your really concerned about levels and if you need more then check them with one of these before adding more.

Whites should be in the 50-60 ppm range when bottled.
