Hello all,

New winemaker here. I just started the Winexpert Eclipse Riesling kit. I inadvertently added the susse-reserve bag to primary. It looks was supposed to be for back sweetening... Is my kit ruined? Can I use honey or some other sugar to back sweeten since I obviously don't have that bag anymore?

At what stage? What was the SG of the juice before you added the f-pack? How many days after pitching the yeast did you add the f-pack?
 
I added it with the main bag of juice prior to pitching the yeast. SG was 1.103 with both bags included.
 
If you added it all upfront before fermentation just make up some simple syrup and back sweeten after it finishes out and you have added the Sorbet. Shoot for about 1.002 or use your taste buds. It will be a tad strong alcohol wise.

Do you like a dry riesling or do you prefer off-dry? Since I prefer a dry riesling, I deliberately add the Suss-Reserve bag to the primary in place of some of the water.

So, your wine is NOT spoiled.

If you want it to finish off-dry, sweeten after stabilizing, as already suggested above.
