Elderberry, Blackberry and Currant Port

I see I have a lot of friends on this list already, very cool. This morning we are steaming 30 pounds of blackberries as the main flavor and acid, about 3 pounds of black currants (for that casis background taste) and 15 pounds of elderberries for color and flavor. We are thinking of adding some extralight malt extract for really deep body and boosting alchohol production with EC1118. With our drought this summer our berries are really really good so this should be a vintage year

Hi Wade, a 5 gallon batch, we will backsweeten it up with concentrated black cherry juice and red grape concentrate.
