My cranberry mead was started in August and it is still too young (tart & dry) to really play with yet and I really think the OB honey is all it will need, well that and oak. So I'll wait until all that is done first. Even if it does not need the vanilla for the whole batch I will pull off a gallon at bottling and see what happens.

I started mine around this time last year, so it was really ready to go (and yummy) - this was my first cranberry wine/mead and I was very surprised at how tasty it turned out. Cranberry relish was never my favorite holiday thing but the wine is very well-balanced, tasty and pretty to boot. Definitely on my list to do again this year as the berries come back in season.
