Hey all! I'm going to start my first batch of pear wine tomorrow! I was wondering if anyone had any advice for me before I began. I'm a newbie, so any and all advice would be greatly appreciated! Thanks! This is the 1 gallon recipe that I'm going to try...

4.5lbs ripe pears
1lbs sugar
1lbs honey
the juice of 2 lemons
1 tsp lemon zest
1/4tsp tannin
1tsp yeast nutrient
1tsp pectin enzyme
1 campden tab
1pkg wine yeast

I just started with a kit. You're more ambitous, but I made the mistake of not reading the instructions carefully and added more water than I should have.

The process is quite simple and I've now taken the time to make my own instructions in point form. It is easier to follow and I can add my own explainations or extra notes where needed.

My advice - know and understand the steps before you start. If you don't know, there are gals and guys on here who will help you.

Lots of people will do some of the craziest things, then ask questions. That's not the way it should be done!
 
I'm not a wine expert by any stretch of the imagination, like so many on this forum, but after my first few batches, I NEVER go by the amount of sugar in the receipt. I always use my hydrometer! You can go overboard so easily with the starting SG, as I did at first, and although the wine was drinkable, it was certainly too sweet for my taste. The alcohol was too strong tasting, too. The SG wouldn't go below a certain point, possibly because the alcohol killed the yeast at a certain point during the fermentation. Good luck with yours.
