First Lost Batch

Well it was bound to happen. I wasn't real happy with a juice bucket of White Zin last fall for awhile. I thought I would let it go to see if it would improve but it isn't. The good thing is it was a free bucket since a White Zin I ordered was mismarked and was a Zin so I got the bucket for free. It's definately infected with acetobactor. What's really bothering me is the mismarked Zin and the Old Vine Zin juice buckets are also not very good. No acetobactor just no very good. I think I may let these sit a little longer and make some vinegar out of the other.

That sucks about the white zin. What's lacking in the other zins?

What brand buckets were these? Harford source?

It was Harford. Can't put my finger on the others. Just no flavor. The ild vine is better then the other. It's only last fall so I'll keep them in the carboys and see what. happens.

Question for you Fred, How did you determine it is acetobactor? Symptoms? Tools for confirming? Just curious as I'd like to broaden my knowledge of "things that can go wrong".. I thank you in advance, -T

It was an undeniable smell of acetone. You couldn't get paste the smell when tasting it. I tried splash racking twice but it was too far gone.
