Id like to take a formal enology/wine class to learn more about the science of wine making. Other than the ucdavis online program (big bucks)are there other online winemaking classes or a boot camp intensive style formal learning class that anyone has taken or knows of? Thanks
 
There are community colleges in NY (not many , but one or two) that offer courses so I am guessing that there may be classes offered in other states where there is a significant wine making industry. You may want to contact the local colleges. I also believe that the British Open University offered (may frequently offer) an online course in the chemistry of fermentation.

The UC Davis course is Expensive. However my friend took this course and is making incredible wines. Now he did grow up learning the craft with from his Italian grandfather and father. But since taking the course His wines are a magnitude better than any produced commercially in Maryland or Virginia.
 
Check out Vesta

They have some weekend seminars as well on various topics like wine chemistry. They rotate around the different campuses.
 
I know some people taking classes online or otherwise at Missouri State University

I myself will be taking some wine science and wine making classes starting next month at the Northwest Wine Academy in Seattle. It's part of the community college system and so relatively cheap for school. I think they also give certificates in Food and Wine Pairing as well as Wine Marketing. One of the best things so far has been the free bottles they just up and give me, they have cases and cases just sitting around that they're like, "Sure, take as many as you need!".

Look into Grayson County College (Texas) to see if you can find something.
