I am still cleaning out the freezer and tossed this together a couple of weeks ago. It has been sitting in the secondary for a few days and I just had to take a look. The way the solids are separating looked so cool I had to share.

What fruit you have in it?
Looks like strawberry and ....
 
Lets see:
Mango, Papaya, Kiwi, Pineapple, Rhubarb, Blueberry, Blackberry, Cherry, and Carlos grapes. No strawberries. Like bananas they never last and I have to threaten everyone to leave them alone.
 
Won't be able to fit all that on a wine label, unless you do a fold out label :)

Looks interesting.... How did the must taste?

Like a bowl of fruit before fermenting. I used the last of my coconut water for the starter and Cote Des Blanc. It still smells nice and fruity but I have not tasted it since I started fermenting. I am expecting lots of sediment because of the mango, papaya and pineapple so I'll let it sit for a bit before I do anything else. Its dry now any way so its time to let the lees compact so I can get more wine before I start any more playing.

When I racked this is was dry as a bone so I stabilized it at the same time. It had about 3 inches of sediment (I expected this) so I decided to rack off, sweeten and add some light oak to go with the coconut water. I played a bit also and added some golden light DME (cause I can). Looks pretty in a glass, nice pink color which I hope remains after bottling since some of this wine is going to some friends who are walking in the Breast Cancer Walk.

It tastes fantastic for such a young wine with so many fruits in the mix. The wine is not going to be ready until after the walk so no problem waiting until after the walk. If I push it, it could be ready to bottle by the middle of November. No point in pushing the wine, when its ready I'll give them out. Fortunately, they know the wine is just getting started.

Not much of a change really and its only been on the oak for almost but not quite 2 weeks. While I would like to rush this to get it into the hands of those walking, I'll let the wine guide me. Right not its still dropping a lot of lees so I'll just recover it and visit it in a few weeks. Give it another 5 weeks at least before I do anything more then check the air lock.

Looks great, tastes great. I had enough left over that we'll be able to enjoy a small bit tonight along with a cyser that just turned 6 months old. I'll bottle the freezer fruit wine in March, April, May ............ You get the idea! The cyser is getting put to bed for a very long nap. My samples of each are in a beer bottles so those pics will need to wait.

VCasey, your wine looks great. I am currently making a strawberry/banana wine and it has been in the carboy only a couple of weeks. I hope mine looks that good and clear in a couple of months. Thanks for sharing the pictures of how the looks of the wine changes over time, John.
 
Hey John,
It tastes great! Tropical fruit, Carlos grapes, a bit of coconut (from the oak), lightly sweet. Hubby tastes apple which is about the only fruit I did not use in this wine. I love what the DME added to this one and I may play more with some other wines and types of DME.
We also tasted the Christmas Cyser and holy smokes that one starts out smooth and has a kick at the end. The CC is similar to my ABC Cyser but I used fruits and coffee and after the oak had soaked in the must for 2 months it soaked in rum for another 2 and then got tossed back in the must. I am putting this away for at least 2 years before I even think about bottling.
I did give the Freezer Fruit wine help clearing. Once I added the DME I knew that was going to be the only way.

Believe it or not I did not forget this one. It's now all bottled and labeled and ready to be delivered.

The color turned out a bit orange, still very nice.
Oh and it tastes great - got 4 thumbs up!
