A lot of us have started making fruit wines the past month or so. Wine Maker magazine has an article and recipes on berry wines and another on choosing fruit wine yeasts. Hey tepe there is even one about choosing yeast for MLF.

Tepe, I was reading these 1 gallon recipes in the magazine. Jack Keller mentions racking 2 or 3 times on some of these fruit wines and then "top them off". What do you top these off with? Water?
 
Ahh.. Good question. The "trick" is to make maybe 1 1/2 gal. After fermentation transfer to a 1 gallon and a 1.5 ltr bottle which you use to 'TOP OFF" with. Remember you get alot of lees you will leave behind.
Or, if you make a f-pac you will need more space.

Yep but remember, always check the recipe with your hydrometer. If you like alot of body / flavor / sweetness adjust accordingly

Yep it is as simple as that - make a bit extra. I make 1 gallon recipes all the time and the trick is to make 1 1/2 gallons. The challenge is when you get those fruit that have an excessive amount of lees such as mango, papaya, and pineapple. The next time I make a mango wine I plan on juicing the fruit (not steam juicing) and see if maybe I can reduce the fall out. Also I make my f-pac at the same time I put the wine together and use those little single serving juice bottles.

Still waiting on my issue...so Appleman you may live in Timbuktu but we're back of the beyond or something up here in MN. Uavwmn, did you get your issue yet?? Geez... I have the worst zip code...

On the fruit wines I always make up 'extra' - never start with exactly 1 gallon in the primary - and put the extra in a sidebottle for topping up. I'll also start with a 4 litre jug and then rack down to 1 gallon jug.

And, for steamer juicers vs. whole fruit, you do get less volume losses with steamed juice when racking!!

The slow boat to my place arrived Wenesday of this week. The waters must have been rough on the lake making the trip more difficult!
