Jim planted the squash this year....We didn't think there were many out there....but we got quite a few....

We both like gourmet baby potatoes all summer, so Jim and I planted some late potatoes in July to have more baby potatoes....I dug them and they had turned into monsters...

I harvested my crop of Elderberries today....

There were some Youngerberries out there that weren't quite ripe....
These have to be the smallest berries I have ever seen.....
So, I have 2 cups full of cleaned berries....Now what????
A beer bottle full of Elderberry Wine on the way.....

Those veggies look awesome, Id bake 1 of those taters with chives, bacon and cream cheese and make a meal out of it alone. The Elderberries may disappear in your steamer!

Those elderberries would make more wine than you would think. They have intense flavors and it only takes a small amount for a full batch. I used about 6-8 pounds for a 3 gallon batch and it was too strong. I would just add some of the berries to a normal batch of another wine- the only problem is that it will create the green goo to any batch you do.
 
Maybe I'll add them to some other fruit when I steam juice....I froze them.

Some of the ones in the photos were not quit ripe, so only ended up with 2 cups or so....

I read somewhere the other day that dried elderberries will not leave that dreaded goo. I was thinking about trying that next year. I dont think I could thaw out what I have now and dehydrate them....could I ?

We are suppose have low temperatures into the 20's this weekend and next week....We had picked most of the veggies out of the garden, but have them stored in an old shed....so it was time to bring what we want into the house...

Jim had to go up to a town that has a 10 acre grave yard of combines and get some used parts....So we loaded up a bunch of veggies and stopped at a friends house....She got all the really big cabbages and squash, boxes of apples, etc...Family of 6 boys [men] that don't want to ever move out of the house.....the ones that do live on the next farm and eat at Mom's....she cooks too good!!!!....So she was happy with the food...I was happy to have less to worry about freezing out there in the shed.......

Fall is really here now, tho today was beautiful...Got lots done...

Man do I love all kinds of squash, Butternut, Acorn Yellow, whatever. Cook it up!
 
I think those butternuts cross pollinated (like they always do) and became HUGE. What a wonderful harvest!
 
Those bigbutternut squash are called neck pumpkins- because they are so big you can put them around your neck like a collar! At the frarm, we usually get a couple apple bins full of them every year- it doesn't ake that many to fill a bin that only holds 20 bushels! What a bounty for you. No wonder you neededd a place to give some away.

Those Butternuts are called BUTTERNUT ULTRA from STOKES SEEDS. in Canada they are in St. Cathrines, Ontairio...my Mom always ordered from them. I order from the Buffalo, NY catalog.

Those are the best squash if they get ripe. There is just a small little seed cavity in the bulb part of the squash, the rest is all food. I always grow a few, but a few plants produce many squash.

This year they didn't all get tan color, I hope some of them improve with a little time. It said pick them before frost and cure in the sun for 10 days...I had been opening the shed door, but it's going to get pretty cold...and the sun seems to only want to shine every other day lately.

Our field Corn harvest hasn't started yet....soybeans are done, but the fields aren't plowed....not a good fall for farmers around here.

So it goes.
 
Give them a quick wash in a 10% bleach solution, rinse VERY well, and then let the sun dry them. They should be good until April that way. On the "Wet" coast, we have to do our squash that way to prevent mold and rot. They always keep after killing all the nasties with bleach. You also don't eat the outside of a hard squash anyway.
 
Those look just like some of the Ultra's we got. Yours seem to be longer and more curled, also more uniform...I like them when they grow straighter...easier to store and cook. Some of ours are straight and some are curled. We also like the plain Butternuts too they are smaller for a more reasonable eating size. Those big ones are

I poke a hole in them and bake them in the oven....then try to freeze some up, but usually we eat it.

I ordered a Harris catalog....With winter coming it's time to start getting catalogs, seed and plant orders...The season of dreaming/planning is soon here....
 
Fall is definitley in Mn. Beatiful crop. I'm making scalloped potatoes tomorrow...one slice of those would probably cover the bottom of my pan.

I agree with you Ramona. You could make Scalloped Potato with just one of those babies! Or maybe a baked potato with leftovers! Giant fries, oh my! Endless possibilities there.
