I have 6 gallons of apple wine that has been bulk aging for 8 months. It was racked over once about 4 months ago. Shame on me greatly, but I hadn't changed the airlock in a few months. The wine looks great, the airlock was not dry, and there is wine right up to the correct level still. I sampled it and it tastes great. The issue is after I tried the sample I discovered, to my horror, some goopy junk inside the airlock.
So...now my very little experience with wine tells me to panic. What now? F0r now, I resealed with a santizied bung, new airlock, and clean solution.
Do I dose the wine with K meta? If so, any risk in running my drill/agitator from an adding oxygen standpoint? Other considersations or concerns?
