I think I fixed the problem. The temperature kept dropping at night to 66-68 and the MLF kept stopping. At 72 or higher there was good activity. Even with a second bacteria the same issues. So now I have two temperature controlled brew belts. I think it's fixed. I am now keeping them at 74 degrees with a 2 degrees differential. The sensors are taped to the top of the carboys.
All seems to be good :)

Where did you get the temperature control kit at? I have some brew belts from George but no control. While I'm asking questions. Do you like that air lock better than the three piece? Why do you use the wooden crates? Looks like you have a very nice setup.<div id="myWatcherDiv" style="display:none;">

</span>Yes, easy to clean and easy to see activity.

It scared the crap out of me lifting a glass container full of wine. The first time you bump one against something you will know what I mean. I can lift them without concern and a lot less strain on my back.

Thanks

I've thought about building a couple crates. It scares me when I bump one carboy against another. I tend to like the three piece airlock better. Now, I'm going to find out more about the temperature control. I had the same problem on my last batch of wine. More money to spend. Thanks<div id="myWatcherDiv" style="display:none;">

Yea, I have a small freezer I use for CS and it would be very hard to lift the carboy in and out without the crate. Also, I have tile floor and like you said, glass bumping is not a good thing.

Great setup! I have clanked my carboys together several times. It is a wonder they haven't broken. Once I had a carboy on a stand behind a door. I opened the door very hard and it banged into the carboy... man, was I lucky it and all that wine didn't come apart. What a mess that would have been.

A friend did break one of his Italian carboys; is was surprising how inconsistent the thickness of the glass was around the carboy. In some places it was almost paper thin; other places it was card board thick. I don't see how it stayed together as long as it did.

I believe I am going to get me some of those temperature controllers.

<h1 ="parseasintitle="" "="">I bought a 'Hydrofarm MTPRTC Digital
Thermostat For Heat Mats' from Amazon for about $27 I just used an old heating pad and set myfermenterwrapped in a blanket on it. I taped the thermostat sensor to the side of the fermenter.Ionly used this once whenit was cold when no fermentation started within 24 hours. After I installed this, fermentation took off -SG went from 1.100 to .990 in no time. i plan on using this thenext time[after I stop by George's place to pick up a kit!] </span></font></h1>
