Woo-hoo, it's BACK and just in time as I only have 4 ribeyes left. I just had them go back and cut me 16 thick steaks off the primal. All vacuum bagged now and in the freezer. Plus, I got the trimmed ribs. Also yummy. Mmmm...

It might be Choice, but I have never had one that wasn't tender as a medium-rare steak.
