Avid vinifera wine maker - 15 years experience with only reds. I make about 45-60 gallons per year for personal consumption. This year I have 55 gallons of Chambourcin aging in a Poly barrel with oak staves and toasted oak chips. I use a stainless tank from St. Pats and have a custom build primary with a PVC 2" ball valve that allows pump overs during ferment.
