I discovered a couple of large Elderberry crops and immediately was reminded of my childhood favorite song by Elton John.

I made 2 batches this past year and yielded about 33 bottles of wine. The first bottle's taste is incredible, after some sweetener added. Now I'm motivated. I've 3.5 gallons of Apple wine started, and will be pulling from the freezer a gallon or so of Huckleberries I picked last summer. Fun times ahead. And now I'm in the learning mode. I feel got lucky with the Elderberries, my first time and all.

Welcome mountainWineGuy, I was introduced to Huckleberries a few years ago on a trip to Yellowstone. I would love to taste some wine from them. Good luck in your wine endeavors.
 
Welcome Montanawineguy, not many from Montana here. I was in Libby for a long time now in Anaconda. Have fun, I have not tried huckleberry yet.

None. This was my first attempt. I've learned a lot since then, and if this years berry crops are as good as last year, I'll be at least doubling my efforts.
 
Did you run into the dreaded green goo with the elderberry? If so a little veg. oil takes it right off. Welcome to the forum. Arne.
 
Welcome, You are forever hooked now. I started many years ago to save a buck. Today I can afford the best, but still make hundreds of gallons a year. Just because I like doing it.

During the fermentation process, I thought I had royally screwed up. The (green) foam smelled like puke. I tasted the mess and thought it was puke. In the end though it did clear up nicely. :db

Till Aug, Elderberry picking season, I just added the Champagne Yeast to this Apple must.
