Thanks to Wine Making Talk for some great information. Being new to wine making I'm going for something different from the seasoned pro's. and against most advice. What can I say. I want to drink some wine now or at least a few weeks from now. Using Turbo yeast, Dynamic Health brand juice concentrates, sugar, in 3 L batches. Ferment for a week and rack. Wait a week and rack. Cold clarify for 10 days, rack and enjoy. I am making larger batches using recipes from websites hoping to get a little ahead and refining my wine making. Some good feed back on my 'fast' wines from some picky wine drinkers and that is encouraging. May stick with this new hobby awhile. Wish me luck.

Welcome to the WMT Forum. I am in Lehigh Acres just west of you. I would suggest you dump that turbo yeast, get some real wine yeast, I like Lalvin EC1118. It will be as fast as the turbo yeast but give you less of a hangover!
 
You can make some variations on Skeeter Pee and be drinking that in a few weeks.
