Hi all just getting myself back in the game and thought I would sign up to the forum. I will be making a lot of juice based wines at the get go but elderberry season is almost upon us. I have made wine on and off for most of my life indeed many early memories include tilting demi johns for dad to hoover up the last drops. Just waiting on a delivery of glassware so I can get going. I have a few tricks that I will share when and as. Great wines all Andy
 
Hi Rice guy yep elderberry is very tannic, I like to either blend it with apples or brambles for more fruit and a small amount of red grape concentrate. Then mature on oak for about 6 months, rack off and put it away until I forget about it, minimum a year. Then rack again and bottle. It is my big investment wine, in terms of time
