Hello all. I just wanted to say hello and introduce myself. My name is David Day, and I have been making wine since 1994. Professionally since 2007. I work for a cooperage and have a lot of knowledge when it comes to oak, especially American Oak. If any of you folks have any questions on oak, barrel aging, or adjuncts.....please feel free to ask.
