I see country wine, as noted a basic pH meter is extremely useful. We can get fair info with pH paper if the color is not dark as a blueberry. Yes you can get away following a recipe like my mom/ grandpa would do, ,,, it just lets you be an artesian with a lot of non-grape fruits safely. I can see interesting blends in your winery, I also “play” with blends of what ever I can harvest/ grow and used to formulate some rice related food products.
