I have a question on how to sanitize my wine destemmer /press and fermenting barrels?
should i use a mixture of potassium metabisulfite and tartaric acid and if so in which analogy ?

There are alot of different opinions on this subject -
I use a teaspoon each of potassium metabisulfite and tartaric acid (or citric acid) in a 1 gallon batch. The acid will make the water ph change from 7 down to wine level of approx 3.
