It is almost that time of year..... Almost time for BACON BREAD!:HB
This is a Hungarian/Gypsie dish.

As the story goes, the gypsies would start by stealing a slab of bacon on their way out of a town. While traveling down the road, they would steal a loaf of bread. Continuing, they would raid other people's gardens and steal peppers, tomatoes, onions, cucumbers, etc.

When they finally got to their camp, they made hungarian BLT's over a camp fire. Over the years, we modified the recipe..

Today, we give money in exchange for these things, but the old joke remains.. "is this authentic?" (meaning is this stolen or did you pay for the ingredients?)


We start by cuting slab bacon into cubes and render the fat very slowly in a roasting pan set onto a bbq grill. Use indirect heat to slow cook it so the cooked bacon is not hard as a rock.

Take good deli rye, brush bacon fat on both sides of each slice and toast on grill. Put toast on plate and top with cooked bacon cubes, and raw dices of tomatos, cucumbers, onions, bepp peppers, hungarian hot wax peppers to form a sandwich.

To cut the grease, sip some good brandy in between bites. If you have fewer than 3 sanwiches in one sitting, you are not a real fan of bacon!

OK, so I know what you are thinking.. Isn't that rather unhealthy? Well, yes it is. However, we only have this once a year and the flavor of the bacon toasted rye, with cubes of bacon, and all of those fresh veggies is enough to far outweigh any health concerns!
 
I don't understand what you mean by "unhealthy." Bacon is my favorite fruit!!

BBQ
roast

Be sure to eat a balanced diet.
 
Good one, even though I prefer Wright's hands-down. Every weekend we have a breakfast of bacon and sliced apples. Mmmmm - those two flavors were made for each other!

About the fat, preheat the oven to 400 degrees. Slice bacon strips in half. Arrange on broiler tray. Cook for 14 minutes one side and 10 after flipping. A lot of the fat will be in the pan.
 
+1 on Wrights! we love it, best thick sliced bacon ever. On the grill on a piece of foil drain on paper towel. Watch so you don't put a hole in the foil and fold up all 4 edges so the grease cannot run out on the grill. No mess in the house or oven.

BUT we may try the broiler tray on a piece of foil next time.

I know you have at least one smoker. Try making your own. You'll never go back to store bought.
