Cleaned out the freezer and found 9 cans of frozen juice I did not get around to using for strawberry lemonade

5 Strawberry Bacardi
4 frozen lemonade
Then when cleaning out the cupboards I found 2 jars of 2-pound strawberry jam.

I decided to throw it too in a 5-gallon pail with water and sugar. I did add pectic enzyme.

Have just under 5 gallons with a starting SG of 1.090

This morning it is down to 1.060 and I realized then I did not add k-meta.

What should I do now? I think it is too late for the k-meta........
 
Wait until fermentation is complete then add it in.

Adding it now will just shock the yeast and stall your fermentation...
 
I doubt you will have much taste and body. Thats not much for a 5 gallon batch.
 
I am just looking for a light summer time drink, it is less then 5 gallons but hard to tell just how much less.
 
I know I will get beat up for this but here goes. I do not use campden tablets or any form of metabisulfite in my wines. Nowhere in the process do I use them. I am extremely allergic to sulfur and cannot tolerate sulfites I almost died from a sulfur reaction 2 years ago when taking an antibiotic that contained sulfur. I make sure everything is cleaned in hot soapy water and well rinsed before use and at stabilizing I use sorbate. I have yet to have any problems with my wines. Even won 2 silver medals this fall. I am aware that someday I will have a wine go bad but that is the chance I must take.
 
Sorry, wineon4, but sulfiites occur naturally during the fermentation process, so you ARE drinking some. Additional K-meta is used to stun wild yeasts and as an anti-oxident, if your yeasts are overpowering the wild ones, fine, but your wine will probably oxidize if you keep it too long.
 
I know some are created during fermentation but that is a small amount, no need for me to add more. My wines don't last long enough to worry. I talked with one of the AWS judges who judged my wines and he told me they should be good for at least 18 months in the bottle. I have no plans to keep them that long :h
