No worries, perfectly normal. Give it a stir and try to submerge the fruit bag a few times a day.I’m guessing this is a healthy ferment but it looks more like boiled offal to me.

No, not often, maybe 40 or 50 times over the last 25 years.You often boiled offal do you? !
