Hi everyone,
I've been bulk aging my 'Cellar Craft Amarone' wine kit for 6 months. I've been abroad for 4 months and have only been able to check on it now. I've noticed that there's a light pink substance on top of the wine itself and I'm uncertain if it's mold or simply bits of old grape skins / oak chips.
I followed the process as normal. Removed the skins. Didn't add any clearing agents to allow it to clear naturally during the bulk aging. I added oak cubes and raisins then left it for 6 months in a carboy.
Initial gravity - 1.108
Final graivty - 0.994
ABV - 14.96%
So from what I've read, the alcohol content should be high enough to stop bacteria growing. I've attached photos of it (Hard to see cause the wine is so dark).
I've also smelt the wine and it's lovely, no foul smells. Any suggestions as to whether it's mold or simply sediment / wood etc that's floated to the top.
