We purchased a Barolo Juice and did the initial transfer from the bucket to the carboy. I am ashamed to say that I did not transfer the juice to a new carboy after approximately 3 months when we should have (March 2013). Now I am wondering if we should just dump it... is it "safe" to proceed at this point? Will it taste horrible? Note: at one point the water lock was a little low and we topped it off... we were worried could be a problem as well...

We are kind of new to wine making and this was our first juice... Originally we were told to transfer it to a new carboy after the sediment was a certain amount on the bottom (about 3-4 months), top it off, then after about 3 months, transfer it again and add 1/4 teaspoon sulfur powder and top it off again...

take the airlock off and give it a smell, if it smells ok, then taste it, if it taste ok, I would rack and sulphite.
