I think real amarone is made with partially dried grapes not sure if raisins will impart the same flavor or not. I think cellar craft sells An amarone kit that has the real dried corvino grapes but I've not seen those sold separately.
Not great h2s issue. I didn't add any nutrient and it finished fermenting so fast. Is yours fermenting fast? I think my took 4 days, maybe it started before I bought it?

It got a bit of smell yesterday, so here's what happened:
-Friday morning picked up bucket and opened by noon, juice very cold and not fermenting yet. SG 1.090
-added thawed frozen pack of crushed Sangio grapes
-yesterday morning signs of fermentation but by late afternoon was VERY foamy and smelled a bit
-SG ~1.074
-last night I added fermaid k (dissolved in a little bit of spring warm water) and stirred plus squeezed grape pack
Checked just now and NO foam at all, fermentation very active and effervescent, smell dissipated and again no foam....
So adding nutrient even at the very start is very important.
SG this morning lowered to ~1.05x and plan to add the rest of fermaid k later today for the final dose.
