K bisulfite vs K metabisulfite

K bisulfite vs K metabisulfite. Any reason not to use this as a sanitizer. My LBS had packages of this instead of K meta and he said that it should be the same. I did a little research and some have suggested that they have different uses and some have suggested that it is all K meta when mixed with water. Any thoughts? Would this reaction happen: KHSO3+H2O-->K2S205. Its been a long time since I have taken chemistry and I am not sure.

Not the same, always use KMeta for a sanitizer. Potassium bisulfate is the potassium salt of bisulfate anion, with the molecular formula KHSO4. An aqueous solution of potassium bisulfate behaves as if the two related compounds (K2SO4 and H2SO4) were side by side uncombined. H2SO4 is SULPHURIC ACID. K-Meta breaks down and leaves you SO2 gas which is what sanitizes your carboys and other associated equipment upon contact.
 
Thanks for the awesome answer ibglowin, that was very informative. Glad the bag was only a couple of bucks I guess. Ill go and pick up some kmeta right now for sanitation and for my primary before I toss everything together tomorrow.

To sanitize, add 3 tbsp of Kmeta to one gallon of water.

What wine are you making? Fruit, kit, frozen, or fresh?

Thanks. I am mixing up an apple-jalapeno tonight in the primary using a combo of cider and frozen concentrate and fresh jalapenos sliced crosswise. I am mixing up a 5 gal batch and was going to add 1/4tsp of Kmeta to that before pitching the yeast the next day. Glad I didnt add the Kbisulfite it sounds like.
