A local grocery store chain has lilikoi concentrate for sale in limited quantities. Since there are many recipies for Welch's Grape Concentrate, I'm gonna follow one of those recipes but use the lilikoi concentrate. Although lilikoi and passion fruit are one in the same, Welch's Passion fruit concentrate is a blend of several fruit flavors while the Hawaiian Sun brand is pure lilikoi. I bought the last 11 cans from one store and went to another store 5 miles away and bought 9 more! At $3.79/can, its still alot cheaper than buying enough lilikoi to get 25 lbs. of pulp! I plan on adding in 12-15 oz. of real lilikoi pulp to the mix. As long as I use some campden tablets to kill any potential wild yeast, is there anything else I should do?

I'm thinking the slurry from this should make an excellent base for skeeter pee!

great score! Passion fruit is a great wine adder, I've never had enough available to make a straight passion fruit wine, but I'd say that would be good too.

I think you'll be fine adding some campden tablets, that will stun everything enough to let your yeast take off.
