Hi, this is my first experience with real wine grape juice. Followed all the instructions to the letter and everything is just fine. I degassed with an electric drill for 5 minutes and then racked into a glass carboy with the oak supplied and was wondering if i really need to use the Chitosan that came with the kit. I would prefer to leave it age and clear on it's own. Pros or cons that anyone is aware of? I've read that Chitosan and or any fining agent can strip flavor from wine.
 
Wood, If you de-gassed thoroughly (and it sounds like you did) the wine can clear nicely by itself. Keep the ambient temperature in the low 70's F if possible to help clearing. It may take more time than using Chitosan but it should clear.

If it does not, you can always add the Chitosan or other fining agents to get the job done.
