I had about 4 gallons of wine I had been bulk aging. I decided to bottle it with a vacuum pump. I previously degassed it many many months ago. Anyways as I was bottling a lot of co2 came out. It was difficult to even bottle. I was aging it in a corny keg with a touch of nitrogen. Does the nitrogen effect anything? I pulled some into a glass and it had a top of foam but did not taste carbonated. Anyone have any idea what is going on w the wine?
 
If you had used C02 in the keg that would have been a problem. I don't think the nitrogen should have carbonated it. Was the wine about 70° when you bottled? If it was not room temperature that could be a possible cause. You didn't mention the type of wine. If it did warm up up the bottle it could also be an MLF going on in the bottle. I tried to start an mlf on a Chilean wine. It never took off even after a year in the carboy. Nearly two years later in the bottle it took off.
