Although my wife and I prefer red wines, we do a couple of whites each year to drink with fish and chicken. She likes the Liebfraumilch style which is off dry, and we have done the 4 week Australian chardonnay which we liked. We also made the 6 week SI Australian Chardonnay, which we found to be che' plywood, so don't want as much oak influence. We have chosen the SI Luna Bianca as our next white, but it is listed as "heavy" oak, so I'm thinking of leaving out a package of oak. Has anyone made this kit and can comment on its quality and oak profile?
