Reread the process.
The syrup will keep for a long time on the shelf.
When I make pickles I submerge the jars in boiling water for 5-10 minutes. Do you need to do the same with simple syrup? I would think not because the syrup is probably very hot going into the jar.
 
It never fails to with add to the background flavor or a slid partnership with the base wine ( balance) to the structure

no just alllow then to sit in a pan do hot water can sit in it , walk away till tomorrow
