I understand what it is, but how do I go about using it on a new wine, and who sells the bacteria? Thanks Tomy

First off- what wine do you want to use it on? It isn't for all wines. Definitely NO to kits. Also isn't recommended for most whites. If you are making a full bodied red, then MLF will be useful some times. If you have a use for it, the easiest one to use George sells here at the store. It is a liquid with no need to add nutrients.
 
I want to use it on a must that hashigh acid& low So2 to mellow and add full body. So.... how do I use it and when, and under what conditions low temp fermintation or high, at the start, 1/2 way or at the end. Ithought the culture was dry like CA16 but guess their is liquid also. Thanks Tomy

By high pH do you mean very high acid?Simply put-pH is a measure of ions and the lower the pH the more acidic and the higher the pH- less acid. A better measure of its need is the TA of the must. If you don't have a TA above about a 6, it really doesn't accomplish much. There just isn't enough Malic acid in it to convert to Lactic acid to make it worthwhile.Is this must a red or a white- grape or something else. These factors all make a difference. MLF is not a cure-all, but does have it's place if needed. You can get the dry and rehydrate yourself, but small packets are hard to come by. The large packets are expensive and do about 60 gallon batches. The liquid makes the process easy.
 
yes I ment high in acid, a low PH number. My bad!

I believe that pomegranate is very high in citric acid, and thus would not benefit from MLF. Only wines that are high in Malic acid benefit from it. Other than grape wines, the only other wines that are quite high in malic acid is blackberry and apple.
 
Well I am doing a blackberry next so guess I will have to do further reasearch as I want to try this procedure. You see I am trying to learn how to make wine, which is a different animal from doing a kit. Thanks for every ones help, I do appreciate it. Tomy
