Good Evening,Might there be someone in the area of Easton Pa/Hackettstown NJ ,That would be willing too test a sample of must for me so I can adjust for a Decent Dry Red ? I have done okay with the kit wines ..But have failed with the Grapes and juices

I have not tried it, but the old school, 100 year ago way to test gravity is to see if an egg floats
pH, if it is pleasing/ drinkable ought to work, you are northern and the issue usually is too much acid. sugar can balance high acid to make it OK.

I wish too make a Cabernet Sauvignon from grapes this Sept. and would like help in adjusting PH & acids
