mead

I want to make mead, but keep stalling on the to boil or not to boil. Any suggestions?

I do not boil as I feel that it burns off a lot of the bouquet of the wine and Ive never had any problems with not doing so for many years. I have won a few medals with my meads.

I do cook the honey alittle to help break down the sugars but I never boil. I am new to mead but it has all turned out good. New as in only 6 batches
