MLF and Elderberry Wine

Anyone ever do malolactic fermentation on elderberry wine? Going for a burly batch and thinking MLF would help round it out.

I don't think there is much malic acid in elderberries. It might be worthwhile to do a chromotograpy on your wine to verify that.

That makes sense, probably heavier on the tartaric side

Elderberries are not very acidic. ph around 4.65
