Hello all,


I have a MM Barolo kit I am ready to start. I travel every week for work. I have to plan the days, So I can start the kit and work on it when I am home.


Does anyone have a calander marked from one of these kits they have done? (highlighting the daysyou did each step)


Example:


Day one= Primary


Day three= Rack


Day 12= Add... blah blah blah

Just follow the # of days on the instructions sheet and youll be fine, racking earlier then recommended can cause trouble but a little extra time in each stage is no problem with the exception of primary if you dont have the lid snapped on. If the lid is snapped on then the blanket of C02 will protect your wine from oxidation. As far as sitting on the fining agent an extra week is actually recommened to let the lees compact better so you can rack off them without disturbing them as much. Once you have racked off fining agents and have the sulfite in your wine then you are good for 3 or 4 months if you have the carboy properly topped up.
