STARTED MY MM MASTERS EDITION ALL JUICE GRANBAROLO YESTERDAY, CHECKED IT TODAY AND IT HAD A PRETTY GOOD HEAD OF FERMINTATION ON TOP, STIRRED AND ADDED RAISINS. CHECKED LATER TODAY AND THE FERMINTATION SEEMS TO BE SUBDUED. NOT MUCH GUNK ON TOP ANYMORE. HAVE MADE 2 MM RENAISSANCE AND 2 MM VINIFERA NOBLE KITS AND THEY HAVE ALL HAD A VERY ACTIVE FERMINTATION. THE TEMP OF THE JUICE IS 70, I HAVE TURNEDIT UP TO 74 TO SEE IF THIS WILL PERK IT UP SOME. THIS IS THE FIRST ALL JUICE I HAVE MADE. IS IT NORMAL FOR THIS SLOW OF FERMINTATION? I DONT HAVE ANY YEAST NUTRIENT. ANY SUGGESTION WOULD BE GREATLY APPRECIATED. MIKE
 
That's a bold wine with raisins. Which should be higher % than normal. Withought a starter it may take 24-28 hrs to start. Temp looks **** so just wait. Be careful that once it starts you may need a blow off tube. What are you fermenting in?
 
lowlevelflyer, I made the AJ Amarone and I remember it starting off a little slow. Maybe a good 18 - 20 hrs. Then it was off and running!!

CHECKED IT THIS AM, TEMP UP TO 74, IT HAS THE HISSING SOUND NOW, THE SG IS STARTING TO FALL, THE GRAPES ARE STARTING TO SWELL,ALL OF THE RIGHT SIGNS. SHOULD I KEEP IT AT THE TOP END OF THE TEMP RANGE OR DROP IT BACK TO THE MIDDLE OF THE TEMP RANGEOF 70?? THE JUICE SMELLS QUITE INVITING. CANT WAIT TO TASTE THIS ONE. ALL OF MY OTHER MM KITS ARE QUITE GOOD, TWO KITS APPOACHING THE ONE YEAR STAGE, THE OTHER TWO ABOUT 4 MONTHS OLD. THANKS TO ALL THAT REPLIED.
 
If fermenting in a bucket leave the lid OFF for a few days. The wine needs oxygen in the begining to help the yeast multiply. It will also help to prevent blow off. That may be a reason that it took a while to start (if the lid was snapped on or having the air lock on a carboy).

I would bring the temp down
 
If you have a brew belt on it I would remove that and let it work with the heat it's generating on it's own. And be sure it has access to plenty of oxygen. We lay a thin towel over the top and set the lid on it. Good luck!
