Muscadine Wine (Nobel)

For those of you who enjoy making red muscadine wine, how long do you ferment on the skins?
Just curious to see what others are doing. I myself ferment til dry on the skins which in turn takes longer to age out.

I usually leave on skins 3-4 days for a nice color and good flavor profile. Longer than that mine gets a little bitter from seeds starting to ferment.

I'm actually thinking about doing the same. I just started a 2 gal batch yesterday from 10 pounds that I had frozen from last Sept.

I only ferment till bubbles don't rise anymore.
