So for easter i opened a bottle of the cab i started this past fall. When i opened the bottle it shot out like a shaken up soda bottle and it had the taste of sparkling wine. Is there any way to clear this issue or does it just need to sit longer.

I started with juice and racked it twice to make sure all the sediment was out of the bottom. This was my second batch and i learned that i should be using a hydrometer. I haven't used one yet and i do plan on getting one.
 
Well, there are at least three possibilities. One is that you bottled the wine with lots of gas still in it. A second is that you still had some residual sugar in it when you bottled, and it continued to ferment in the bottle to produce more gas. The third (and least likely) is that it underwent malolactic fermentation in the bottle. This is caused by certain bacteria that eat malic acid.

To "cure," the simplest procedure would simply be to decant your wine for a day or so before drinking. Otherwise, you could open all the bottles, pour them into a bucket or carboy, degas more, then rebottle.
