Im in need of some help with some homemade fruit wine. I am looking to make a high alcohol muscadine wine. hoping to get around 20% alcohol. I will be making 1 gallon, here is what i have: 1 gallon of muscadine cider. wyeast 4347 eau De vie, go- ferm rehydration. I was going to not use any water and just 100% muscadine cider, to keep flavor. now my question is how much sugar would you reccomend and do i add it all at once or half sugar now then half in a week or so. Also what other additives should. any help would be appreciated.
