Would there be any problem using a 7.9 gal primary bucket for smaller 1-2 gallon batches? If this will work, I would rather purchase a larger bucket that would be suitable for 6 gallon batches and use the additional funds for carboys.

BTW...this hobby is very addictive!
 
That is fine and actually better to get more air and plenty of room to do all your mixing in. Just make sure to rack at appropriate time and not let it stay in a vessel with that much room to long after fermentation is done.
