just finished our first run at growing fruit in the bottle. after heavy winds this year, we have one apple and one pear. they are still on the tree and ready for picking. I need to wash fruit and bottle with k-meta im sure, but what needs to be added to preserve for years to come without rotting, or re-fermenting and blowing the cork. I have a previous pear wine that I cranked up to 17 % . usually my pear and apple wines are 8 to 12 % depending on year.

Really curious about this too. I'd love to see some pics of your bottles/fruit too. Cheers!

Got to have pictures of this. One thing you have to consider is that the fruit has a volume of its own, that its skin is waxy and isnt just going to absorb the wine, and that the insides of apples and pears have things growing inside the core so how do you get to them and preserve the apple from the inside and outside? I would you make a mix of 3 parts wine and 2 parts brandy. This would up the abv to a better point of safety.I would then use a skewer to poke some small holes in the fruit to allow better absorbtion

And pictures would be nice.

Either alcohol or formaldehyde. I've read of using straight 80 proof vodka for this purpose but have no personal experience. I have a bottle of cherries in 80 proof alcohol given to me a couple years ago, they still look good.

I went and watched a whole bunch of "pear in a bottle" videos on YouTube. Only one of them mentioned sanitation. And the only thing they said was after picking they use a long brush to reach in and kind of clean up the pear. Not much help I know. Still following this thread though and look forward to more posts/follow up.
Best,

CE
