Today I bottled my quad batch (just a shade over 11 cases) of Nero D'Avola made from Italian juice and Nero D'Avola grape packs (homemade). It has bulk aged for a year and a half and tastes great now. I think it will be a real winner after about two more years in the bottle. Tempus narrabo.
There are three bottles on the table in the background and the one on the left with a paper label is my "Chingachgook," the last of the Mohicans. I like to designate bottles like that so that I know it was topped up with clear wine from the dregs, and probably will not be typical of the rest of the batch.
